Ingredients

  • 1 lb lean turkey breakfast sausage
  • 1 tbsp olive oil
  • 1 large red bell pepper diced
  • 1/2 medium yellow onion diced
  • 12 large eggs
  • 1 cup liquid egg whites
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1 can 15 oz black beans, drained and rinsed
  • 1 1/2 cups shredded reduced-fat cheddar cheese
  • 6 large 10-inch whole-wheat tortillas
  • 1/2 cup salsa plus more for serving
  • 1/4 cup chopped fresh cilantro optional

Method

  1. Heat olive oil in a large nonstick skillet over medium-high heat. Brown turkey sausage, breaking into crumbles, 6-8 minutes until cooked through. Transfer to a large bowl.
  2. In the same skillet over medium heat, cook bell pepper and onion 3-4 minutes until softened. Add to the sausage bowl.
  3. Whisk eggs, egg whites, salt, pepper, cumin, and garlic powder. Scramble in the skillet over medium-low heat 3-4 minutes until just barely set and glossy. Stir in black beans to heat through.
  4. Add eggs and beans to the sausage and vegetables; fold together. Cool 5-10 minutes.
  5. Warm tortillas until pliable (10-15 seconds per side over a flame or 30 seconds in a dry skillet). Keep stacked under a towel.
  6. Fill each tortilla with about 1 cup filling, 1/4 cup cheddar, a spoonful of salsa, and cilantro. Fold bottom up, tuck sides in, and roll tightly.
  7. Optional: crisp seam-side down in a hot skillet 1-2 minutes per side until golden.
  8. Serve immediately, or cool completely and wrap individually for meal prep.

Notes

Protein 34g | Carbs 42g | Fat 18g | Fiber 9g per burrito. Eggs rubbery after reheating? Pull them from the heat while still glossy — they finish cooking from residual heat. Wrap cooled burritos individually in foil for the freezer; reheat from frozen 2.5-3 minutes.
