High-Protein Chicken Meal Prep Bowls

Ingredients
  

  • 1.5 lbs 700g chicken breast ​
  • 2 tbsp olive oil divided
  • 1 tsp paprika ​
  • 1 tsp garlic powder ​
  • 1 tsp salt ​
  • 1/2 tsp black pepper ​
  • 2 cups cooked brown rice ​
  • 2 cups broccoli florets ​
  • 2 ​ medium sweet potatoes cubed
  • 1 tbsp lemon juice ​

Method
 

  1. Preheat oven to 425°F (220°C). Toss sweet potato cubes with 1 tbsp olive oil, salt and pepper; roast 20-25 minutes until caramelized.
  2. Rub chicken breasts with remaining olive oil, paprika, garlic powder, salt and pepper.
  3. Grill or pan-sear chicken 6-7 minutes per side until the internal temperature reaches 165°F (74°C). Rest 5 minutes, then slice.
  4. Steam broccoli florets 4-5 minutes until bright green and tender-crisp.
  5. Divide rice, sliced chicken, broccoli and sweet potatoes between 4 meal prep containers. Squeeze lemon juice over the top.
  6. Refrigerate up to 4 days. Reheat in the microwave for 2-3 minutes.

Notes

Swap brown rice for quinoa for even more protein. Add hot sauce or a Greek yogurt drizzle when serving.
