Method
- Cook the rice: Cook 1 cup dry brown rice with 2 cups water or chicken broth and a pinch of salt (about 40 minutes if starting from dry). Fluff with a fork and set aside.
- Brown the beef: Heat olive oil in a large, deep skillet over medium-high heat. Cook diced onion 3-4 minutes until softened. Add ground beef, breaking into small crumbles, and cook 6-8 minutes until no pink remains and edges are browning.
- Bloom the spices: Add minced garlic to the center of the pan and cook 30 seconds until fragrant. Sprinkle chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne over the beef, stir, and cook 1 minute.
- Simmer: Pour in water or beef broth, scraping up browned bits. Reduce heat to medium-low and simmer 5 minutes until most liquid has cooked off and beef is coated in a glossy sauce. Taste and adjust salt.
- Add beans and corn: Stir in drained black beans and corn. Cook 3-4 minutes until heated through. Remove from heat.
- Assemble: Divide rice among five meal prep containers (about 1/2 cup each). Top with beef mixture and sprinkle with shredded cheese while hot so it melts.
- Pack toppings separately: Portion salsa, Greek yogurt, cilantro, and lime wedges into small containers. Cool bowls completely before sealing.
