Ingredients

  • 1 1/4 lbs salmon fillets skin removed, cut into 1 1/2-inch cubes
  • 1 tablespoon cornstarch
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 2 tablespoons olive oil divided
  • 1/4 cup honey
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sriracha optional
  • 3 cloves garlic minced
  • 1 teaspoon sesame oil
  • 3 cups cooked brown rice from 1 cup dry
  • 4 cups broccoli florets about 1 large head
  • 1 tablespoon sesame seeds
  • 3 green onions thinly sliced

Method

  1. Roast the broccoli: Heat oven to 425°F. Toss broccoli with 1 tablespoon olive oil, salt, and pepper. Roast 18-20 minutes, flipping once, until browned and crisp at the edges.
  2. Season the salmon: Pat salmon cubes completely dry. Toss with cornstarch, salt, pepper, garlic powder, and paprika until evenly coated.
  3. Sear the bites: Heat remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Sear salmon in a single layer 2-3 minutes per side until deeply golden and crisp. Work in batches if needed. Transfer to a plate.
  4. Mix the glaze: Whisk honey, soy sauce, rice vinegar, sriracha, minced garlic, and sesame oil in a small bowl.
  5. Glaze the salmon: Reduce heat to medium. Simmer glaze in the skillet 60-90 seconds until slightly thickened. Return salmon and toss 1-2 minutes until lacquered and sticky.
  6. Build the bowls: Divide rice among 4 bowls, add broccoli and salmon bites, and drizzle with remaining glaze.
  7. Garnish and serve: Top with sesame seeds and sliced green onions. Serve immediately or pack into meal prep containers.
